Instead of throwing all your leftover vegetables away, chop them into bite size pieces and freeze them in a large plastic container or two. I even add plain chicken and beef too. You can keep adding to it until it's full. Then take the frozen concoction and defrost it. Puree in a blender with one half of a raw onion. Then heat it in a pot on the stove with some chicken broth or water and you have a great soup. I sometimes add a couple of diced tomatoes or a can of tomato paste. It's great for a quick and healthy meal! And every time, it makes a different soup because you have a mixture of different ingredients. Sometimes it turns out green from the leafy green veggies and sometimes it's orange if I have a lot of squash in it.
